Udon Noodles with Egg and Carrots
- 1 3/4 cups water, divided
- 1 egg
- 1/2 cup baby carrots
- 1 (7.25-ounce) package udon noodles
- 4 Chinese snap peas,* sliced lengthwise, as desired
- 1 tablespoon chopped peanuts
Add 1/4 cup water to small compartment. Set egg holder in small compartment. Place egg in egg holder. Position baby carrots in egg holder. Add 1 1/2 cups water to large compartment. Place cover on unit. Plug in Power Bento™ electric cooker. Cook 8 minutes. When time is up, remove cover. Add udon noodles, reserving seasoning packet. Add snap peas as desired. Leave the cover off. Cook 3 minutes.
Unplug Power Bento. Remove egg holder and allow egg to cool naturally 5 minutes for medium cooked and 2 minutes for soft cooked. Then immediately run cold water over egg and peel. Meanwhile, stir contents of seasoning packet into noodles. Top with peanuts. Slice or cut egg as desired onto noodles.
*Other vegetable choices include: shredded carrots, shredded or spiralized zucchini, sliced green onions, and mushrooms.
For more variety, substitute broccoli or cauliflower florets for the baby carrots.
