Swedish Cucumber Salad
Makes about 2 cups
- 1 long seedless cucumber, trim ends
- 1/2 teaspoon salt
- 1/3 cup mayonnaise
- 1/3 cup sour cream or plain Greek yogurt
- 1 tablespoon vinegar
- 1 teaspoon sugar
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill
Fit SaladShooter® electric slicer/shredder with Slicing Cone. Slice cucumbers into a colander. Sprinkle salt over cucumber slices and allow to drain for 1 hour. Transfer cucumber slices to a medium bowl; set aside. In small bowl, combine mayonnaise, sour cream, vinegar, sugar, parsley and dill. Pour over cucumbers. Refrigerate for 1 hour before serving.
