Irish Soda Bread
Makes 1 loaf. Cut into 12 slices.
- 4 cups sifted all-purpose flour
- 1 tablespoon sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup margarine
- 1 cup raisins
- 1 1/2 cups buttermilk
Sift together flour, sugar, baking soda, salt, and baking powder into large bowl. Cut in margarine until crumbly. Stir in raisins. Add buttermilk and stir to make a soft dough. Turn onto a lightly floured board and knead to form a soft ball. Pat by hand on a greased baking sheet to 1 1/4-inch thickness. With a sharp knife, score into 4 sections. Bake in 350°F oven for 1 hour, or until bread is browned and a toothpick inserted in the center comes out clean. Serve warm.
