• 6 carrots, peeled, cut into 1/2-inch slices
  • 1 cup water

  • 2 tablespoons butter
  • 1 tablespoon honey
  • 1 tablespoon fresh chopped tarragon or 1 teaspoon dried tarragon
  • Salt and freshly ground pepper

Place cooking rack (or steamer basket) in a Presto® Pressure Cooker. Add carrots and water. Close cover securely. Place pressure regulator on vent pipe. Cook 5 minutes at 15 pounds pressure. Cool cooker at once.

Remove carrots; set aside. Drain cooking liquid and remove rack. Add butter, honey, and tarragon to cooker and allow butter to melt. Return carrots to cooker and coat with butter-honey-tarragon mix. Salt and pepper to taste.
