Gyro Stuffed Keto Waffle
- Almond Flour Waffle Batter (see recipe below)
- 1 teaspoon oregano
Filling per waffle
- 4 slices gyro meat
- 1/4 cup chopped tomato
- 2 thin slices onion
- Tzatziki sauce, for serving
Prepare waffle batter as directed; stir in oregano. Preheat Stuffler™ stuffed waffle maker with waffle tongs in unit for 10 minutes.
Heat gyro meat in skillet or microwave, draining excess fat.
Spread about 1/3 cup batter into waffle maker so bottom grids and waffle divider are thinly but completely covered. Place gyro meat slices onto batter, cutting as needed to leave a thin margin around edge. Scatter tomato pieces and onion slices over meat. Spread additional batter over filling until it reaches the top of the square projections on the waffle tongs. Close waffle maker and flip. Cook for 7 to 8 minutes. Remove stuffed waffle to plate. Serve with tzatziki sauce for dipping waffle wedges.
Tzatziki is a Greek cucumber yogurt sauce usually available in the refrigerated deli or produce department where cheese, hummus, and dips are sold.
