Champagne Fruit Fritters
Batter
- 1 cup sifted all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 cup cold champagne
- 1 egg, slightly beaten
- 2 tablespoons vegetable oil
Choice of Fruits
- 1 or 2 bananas, peeled, cut into 1-inch slices
- 1/2 pineapple, peeled, cored, cut into bite-size pieces
- 1 or 2 kiwi, peeled, cut into bite-size pieces
- Dried pineapple, cut into bite-size pieces
- Figs
Additional Ingredients
- Flour for coating
- Vegetable oil for frying
- Chocolate Amaretto Drizzle (see recipe below)
Preheat oil in Presto® electric deep fryer. Prepare batter just before using. Combine ingredients for batter. Beat just until moistened (a few lumps will remain). Keep batter cool by placing bowl on ice inside a larger bowl or sided baking pan.
Lightly coat piece of fruit with flour, shaking off excess. Dip in batter, then fry in hot oil. Do not crowd fryer. Cook until golden, turning frequently. Remove from oil and drain on paper towel lined tray. Repeat with remaining fruit. Serve with chilled Chocolate Amaretto Drizzle.
