Apple Peanut Butter Stuffed Waffle
- Peanut Butter Filling (see recipe below)
- Pancake/waffle mix, prepare as directed for waffles
- 2 medium apples, peeled (optional), cored, and quartered
- 1 teaspoon sugar
- 1/4 teaspoon cinnamon
Filling per waffle - 1/4 cup Peanut Butter Filling
- 1/3 cup diced apples
Prepare Peanut Butter Filling as directed. Prepare waffle batter as directed on package. Preheat Stuffler® stuffed waffle maker with waffle tongs in unit for 10 minutes.
Cut apple quarters into large-dice size and place in a bowl; reserve. Mix sugar and cinnamon in a small bowl. Sprinkle sugar/cinnamon mixture over diced apples and toss to coat.
Spread about 1/3 cup batter into waffle maker so bottom grids and waffle divider are thinly but completely covered. Spoon 1/4 cup peanut butter filling onto batter leaving a thin margin around edge. Place 1/3 cup apples over peanut butter mixture. Pour additional batter over filling until it reaches the top of the square projections on the waffle tongs. Close waffle maker and flip. Cook for 7 to 8 minutes. Remove stuffed waffle to plate.
Peanut Butter Filling will keep for up to a week, tightly covered, in the refrigerator.
Choose an apple variety such as Macintosh, which cooks down to a soft texture, or Honeycrisp, which holds its shape for a more crunchy texture.
