Almond Broccoli
4 to 6 servings
- 2 pounds fresh broccoli, prepare as directed
- 1 cup water
- - - - - - - - - - - - - - - - - - - - - - 1 tablespoon olive oil
- 1 clove garlic, minced
- 2 tablespoons slivered almonds
- Salt
Separate broccoli florets from stalks where the floret stems meet the stalks. In a small bowl combine olive oil and garlic; set aside. Place cooking rack (or basket) and water in Presto® 4-, 6-, or 8-quart Pressure Cooker. Place broccoli on rack in cooker. Close cover securely. Place pressure regulator on vent pipe. COOK 0 MINUTES* at 15 pounds pressure. Cool cooker at once.
Place broccoli in serving dish; toss with olive oil mixture. Sprinkle broccoli with almonds. Season with salt, as desired.
*To COOK 0 MINUTES is to cook only until the pressure regulator just begins to rock.
