Tuna Melt with Tomato Stuffed Waffle
- Tuna Salad (see recipe below)
- Savory Waffle Batter (see recipe below)*
- Filling per waffle
- 1/3 cup tuna salad
- 1/4 cup chopped Roma tomato
- 1 slice provolone cheese
Prepare waffle batter as directed. Preheat Stuffler™ stuffed waffle maker with waffle tongs in unit for 10 minutes.
Spread about 1/3 cup batter into waffle maker so bottom grids and waffle divider are thinly but completely covered. Spread tuna salad onto batter. Scatter tomato pieces over tuna salad and top with cheese. Spread additional batter over filling until it reaches the top of the square projections on the waffle tongs. Close waffle maker and flip. Cook for 7 to 8 minutes. Remove stuffed waffle to plate.
*Waffle, pancake, and all-purpose baking mixes can be substituted for Savory Waffle Batter recipe. Prepare as directed on package. Add 1/4 cup sliced green onion to batter. Yield may vary depending on mix used.
- 2 (5-ounce) cans albacore tuna, drained and flaked
- 2 tablespoons minced onion
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh lemon juice
- Salt and pepper
Mix tuna, onion, mayonnaise, mustard, and lemon juice in a small bowl. Season to taste with salt and pepper.
