Pineapple Upside Down Stuffed Waffle
- Pancake /waffle mix, prepared as directed*
Filling per waffle
- 2 pineapple slices, cut in half, drained
- 2 maraschino cherries, cut in half
- 1 tablespoon chopped pecans
Prepare pancake/waffle batter as directed on package. Preheat waffle maker with waffle tongs in unit for 10 minutes.
Spread about 1/3 cup batter into waffle maker so bottom grids and waffle divider are thinly but completely covered. Arrange pineapple pieces onto batter leaving a thin margin around edge. Scatter cherries and pecans over pineapple. Spread additional batter over filling until it reaches the top of the square projections on the waffle tongs. Close waffle maker and flip. Cook for 7 to 8 minutes. Remove stuffed waffle to plate.
*All-purpose baking mix can be substituted for pancake/waffle mix. Prepare as directed on package. Yield may vary depending on mix used.
