Pineapple Salsa
Makes 4 servings
- 2 cups chopped fresh pineapple
- 1 cup chopped Roma tomatoes
- 1/3 cup chopped red pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons finely chopped jalapeño pepper
- 2 tablespoons fresh lime juice
Mix pineapple, tomatoes, red pepper, onion, cilantro, jalapeño pepper, and lime juice in a bowl. Toss gently. Chill for 1 hour to blend flavors.
