Carrot Cake Waffle Batter
About 3 stuffed waffles
- 2 cups pancake/waffle mix
- 1/4 cup chopped pecans
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1 cup milk
- 1 cup shredded carrots, about 1 large
- 1/2 cup applesauce
- 1/4 cup vegetable oil
- 2 tablespoons brown sugar
Mix pancake/waffle mix, pecans, cinnamon, cloves, ginger, and nutmeg in a large bowl. Whisk milk, carrots, applesauce, oil, and brown sugar in a medium bowl. Whisk liquid mixture into dry ingredients until thoroughly moistened. Do not overmix.
