When using a Presto® Stovetop Pressure Canner at an altitude above 2,000 feet, it will be necessary to process low acid foods at a pressure higher than 11 pounds. If, in doing so, the pressure regulator begins to rock, ignore the dial gauge and lower the heat to maintain a continuous, slow rocking motion of the pressure regulator for the duration of the processing time. The pressure regulator should be slowly and gently rocking as shown in this video.
