Southern Salad

  • 1 medium sweet potato
  • 1 green pepper
  • 1 cucumber
  • 2 tablespoons lemon juice
  • 1/2 cup lemon yogurt
  • 3 tablespoons almonds or cashews

Pare sweet potato; cut into chunks to fit SaladShooter® electric slicer/shredder food chamber. Using Shredding Cone, shred sweet potato into mixing bowl. Seed and cut green pepper into chunks to fit in food chamber. Using Slicing Cone, slice into bowl with sweet potato. Fit cucumber into food chamber, trimming if necessary. Slice into bowl with sweet potatoes. Sprinkle lemon juice over vegetables; add yogurt, mixing well. Put nuts in food chamber and using Shredding Cone, shred over salad.
Makes about 3 1/2 cups
