Fried Cheese (Queso Frito)

  • 1/2 pound melting cheese (Provolone, Mozzarella, Gruyere, etc.)
  • Flour
  • 2 eggs, beaten
  • Dry bread crumbs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 teaspoons minced green onion
  • 2 teaspoons minced parsley
  • 1 teaspoon minced capers

Cut cheese into 2 1/2- x 1/2-inch sticks. Dust with flour. Dip in beaten egg and into crumbs. Press crumbs around cheese; dip again in egg and crumbs to make a firm coating. Refrigerate until time to serve. In Presto® electric deep fryer, deep fry 3 or 4 at a time, turning once, until desired brownness is reached. Remove from oil and drain on absorbent paper. Repeat until all are cooked.
Makes about 24

Combine remaining ingredients and serve as a dip for cheese.
