Crab and Corn Gems

  • 1 6-ounce can Lump Crab Meat
  • 1/2 cup cooked whole kernel corn
  • 4 green onions, chopped
  • 1/2 teaspoon coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon salt
  • 1 tablespoon lime juice
  • 3 eggs
  • 3/4 to 1 cup dry bread crumbs
  • 4 cups cooking oil

Place crab, corn, onions, seasonings, lime juice and 1 egg into a food processor. Process with an on and off action until corn is chopped and mixed in. Measure out heaping teaspoonfuls of mixture and roll in bread crumbs. When all are formed, chill 30 minutes in freezer. Beat remaining eggs; roll crab balls in egg and again coat with bread crumbs. Preheat oil in Presto® electric deep fryer. Fry gems 3 to 4 minutes or until golden brown. If desired, serve with yogurt or sour cream flavored with lime juice and salt.
